300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Drink (makes 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

For the Cordial: Combine the listed ingredients in a pot, bring to a gentle boil, mixing so the sugar melts. After that, take off the burner allowing it to reach room temperature fully. Pour into a sterilised bottle, cap it and store chilled, it can be stored for around one month.

For the Premix: Combine the specified spirits and syrup into one big jug, leave to sit for an hour, then pass it through preferably using cheesecloth, making it perfectly clear.

When ready to serve: Measure 85ml from the premix into your cocktail shaker filled with ice, and stir gently for one minute to cool it down. Strain into a frosted cocktail glass or a similar vessel, garnish with a few cranberries and complete it with a quick spritz with the mandarin essence over the drink.
